Description

These Black Forest Cookies feature soft, fudgy chocolate cookies topped with sweet cherry filling, fluffy whipped cream, and chocolate shavings. Inspired by classic Black Forest cake, they’re a delicious and beautiful homemade dessert.

Ingredients

Scale

Chocolate Cookie Base

  • 113 g unsalted butter (1/2 cup), melted
  • 110 g brown sugar (1/2 cup)
  • 50 g granulated sugar (1/4 cup)
  • 1 egg + 1 egg yolk
  • 1 tsp vanilla extract
  • 15 ml heavy cream (1 tbsp), optional
  • 150 g all-purpose flour (1 cup + 2 tbsp)
  • 35 g unsweetened cocoa powder (1/3 cup)
  • 1 tsp baking soda
  • ¼ tsp salt
  • ½ cup chocolate chips

Cherry Filling

  • 100–150 g cherries (fresh or frozen), pitted and halved
  • 20 ml water (2 tbsp)
  • 20 g granulated sugar (1 1/2 tbsp)
  • 1 tsp cornstarch
  • 1 tsp lemon zest

Whipped Cream and Toppings

  • 120 ml heavy cream (1/2 cup), chilled
  • 1 tbsp powdered sugar
  • Chocolate shavings
  • Fresh cherries (optional, but highly recommended for that Black Forest look!)

Instructions

  1. Prepare the cherry filling: Add the cherries, water, granulated sugar, cornstarch, and lemon zest to a small saucepan. Cook over medium heat, stirring gently, until the cherries soften and the mixture thickens into a glossy, spoonable filling. Remove from the heat and cool completely.
  2. Mix the wet ingredients: In a mixing bowl, whisk the melted butter, brown sugar, and granulated sugar until combined. Add the egg, egg yolk, and vanilla extract. Mix until smooth. Stir in the optional tablespoon of heavy cream if using.
  3. Combine the dry ingredients: In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  4. Make the cookie dough: Add the dry ingredients to the wet mixture and stir until a thick dough forms. Fold in the chocolate chips until evenly distributed.
  5. Shape the cookies: Preheat the oven to the temperature specified in the recipe’s baking method. Line a baking sheet with parchment paper. Scoop the dough into portions and arrange them on the baking sheet, leaving space between each cookie.
  6. Bake: Bake until the edges are set and the centers still look slightly soft. Allow the cookies to rest briefly on the baking sheet before transferring them to a wire rack to cool completely.
  7. Whip the cream: Beat the chilled heavy cream with the powdered sugar until soft-to-medium peaks form. Keep refrigerated until ready to decorate.
  8. Assemble: Spoon the cooled cherry filling onto the completely cooled cookies. Add whipped cream, then finish with chocolate shavings and fresh cherries if desired. Serve shortly after decorating for the best texture.

Notes

  • Fresh or frozen cherries can be used. If using frozen cherries, thaw and drain excess liquid before cooking.
  • Cool the cherry filling completely before assembling to prevent the whipped cream from melting.
  • Bake and prepare the cherry filling ahead of time, then whip the cream and decorate shortly before serving.
