  • Author: Emmy Carter

Description

Breakfast Sweet Potato is a savory, satisfying breakfast made with tender baked sweet potatoes, turkey bacon, white cheddar cheese, and eggs. Finished with fresh scallions, this easy breakfast combines sweet and savory flavors in a hearty meal perfect for breakfast or weekend brunch.

Ingredients

Scale
  • 3 large sweet potatoes
  • 1/2 cup turkey bacon, cooked and crumbled
  • 2 tablespoons unsalted butter
  • 1/4 cup shredded white cheddar cheese
  • 6 large eggs
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt
  • Scallions, minced for garnish

Instructions

  1. Preheat the oven to 400°F (200°C). Wash and dry the sweet potatoes, then pierce each potato several times with a fork.
  2. Place the sweet potatoes on a baking sheet or in an oven-safe baking dish. Bake until fork-tender, approximately 45–60 minutes depending on their size.
  3. If the turkey bacon is not already cooked, cook it according to the package instructions until crisp, then crumble it into small pieces.
  4. Remove the sweet potatoes from the oven and let them cool slightly. Cut each potato lengthwise and gently loosen some of the flesh, keeping the skins intact.
  5. Divide the unsalted butter among the potatoes. Season with salt and black pepper, then gently mix the butter and seasoning into the sweet potato flesh.
  6. Sprinkle the cooked, crumbled turkey bacon and shredded white cheddar over the prepared sweet potatoes.
  7. Carefully add the eggs to the potato openings, distributing them among the potatoes. Arrange the potatoes in an oven-safe dish to keep them stable.
  8. Return the dish to the oven and bake until the egg whites are set and the eggs reach your preferred doneness, approximately 10–15 minutes or longer as needed. For food safety, cook until the whites and yolks are firm, or until the eggs reach 160°F (71°C).
  9. Remove from the oven, garnish with minced scallions, and serve warm.

Notes

  • Choose sweet potatoes of similar size so they cook at approximately the same rate.
  • Prepare the turkey bacon ahead of time to make assembly easier.
  • Add fresh scallions just before serving for a bright, fresh finish. Cooking time for the eggs may vary depending on their size and preferred doneness.
