  • Author: Emmy Carter
  • Total Time: 45 minutes
  • Yield: 6 servings 1x

Description

This Copycat Olive Garden Chicken Gnocchi Soup features tender chicken breast, pillowy potato gnocchi, fresh spinach, and vegetables in a rich, creamy broth flavored with garlic and thyme. A comforting, restaurant-inspired soup perfect for lunch or dinner.

Ingredients

Scale
  • 4 tablespoons butter
  • 1 cup celery
  • 1 cup carrots (shredded or chopped)
  • 1 medium sweet onion (finely chopped)
  • 4 garlic cloves (minced)
  • ¼ cup flour
  • 4 cups chicken broth
  • 1 pound chicken breast (cooked and chopped)
  • 1 package potato gnocchi (16 ounces)
  • 2 cups heavy cream
  • 3 cups spinach
  • 1 tablespoon fresh thyme leaves (see notes for dried or ground thyme)
  • Salt & pepper to taste

Instructions

  1. Melt the butter in a large soup pot over medium heat.
  2. Add the celery, carrots, and finely chopped sweet onion. Cook, stirring occasionally, until the vegetables begin to soften.
  3. Add the minced garlic and stir briefly until fragrant.
  4. Sprinkle the flour over the vegetables and stir continuously until it is fully incorporated.
  5. Gradually pour in the chicken broth while stirring to create a smooth mixture.
  6. Bring the soup to a gentle simmer, stirring as needed, until the broth begins to thicken.
  7. Add the cooked, chopped chicken breast and potato gnocchi. Stir gently and simmer until the gnocchi are tender, following the package guidance where applicable.
  8. Reduce the heat and stir in the heavy cream until fully combined.
  9. Add the spinach and fresh thyme leaves. Stir until the spinach wilts into the soup.
  10. Season with salt and pepper to taste. Serve hot.

Notes

  • Dried or ground thyme can be used instead of fresh thyme, but use a smaller amount and adjust to taste because dried and ground herbs can be more concentrated.
  • Stir the flour thoroughly into the butter and vegetables before adding the broth to help prevent lumps.
  • Reheat leftovers gently. If the soup thickens during storage, add a little chicken broth to adjust the consistency.
