  • Author: Emmy Carter
  • Total Time: 35 minutes
  • Yield: 10 servings 1x

Description

Cowboy Queso Dip is a creamy, hearty appetizer made with ground pork sausage, crispy bacon, Velveeta, pepper jack cheese, Rotel tomatoes with green chilies, black beans, and corn. Perfect for game days, parties, and gatherings, this cheesy dip is served warm with tortilla chips and customizable toppings.

Ingredients

Scale
  • 1 lb ground pork sausage (spicy or mild)
  • 6 slices bacon, cooked and crumbled
  • 1 can (10 oz) Rotel tomatoes with green chilies (undrained)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup frozen or canned corn (drained if using canned)
  • 16 oz Velveeta cheese, cubed
  • 1 cup shredded pepper jack cheese (or Monterey Jack)
  • ½ cup beer (or substitute chicken broth or milk)
  • 1 tablespoon taco seasoning
  • Fresh cilantro, chopped (for garnish)
  • Optional toppings: diced jalapeños, green onions, hot sauce

Instructions

  1. Cook the ground pork sausage in a large skillet over medium heat, breaking it into small crumbles as it cooks. Cook until fully cooked through, then drain excess grease if necessary.
  2. In a large saucepan or slow cooker, combine the cubed Velveeta, shredded pepper jack cheese, and beer, chicken broth, or milk. Heat gently, stirring regularly, until the cheese begins to melt and the mixture becomes creamy.
  3. Add the cooked sausage, crumbled bacon, undrained Rotel tomatoes, drained and rinsed black beans, corn, and taco seasoning. Stir thoroughly to distribute the ingredients evenly.
  4. Continue heating gently, stirring occasionally, until the cheese is fully melted and all the ingredients are hot throughout.
  5. Garnish with chopped fresh cilantro and optional diced jalapeños, green onions, or hot sauce. Serve warm with tortilla chips, corn chips, or sturdy crackers.

Notes

  • Use mild sausage and Monterey Jack cheese for a milder dip, or spicy sausage and jalapeños for extra heat.
  • Replace the beer with ½ cup chicken broth or milk if preferred.
  • Reheat leftovers gently, stirring frequently and adding a small splash of milk or broth if needed to restore the creamy consistency.
