  • Author: Emmy Carter
  • Total Time: 1 hour 25 minutes
  • Yield: 6 servings 1x

Description

This Healthy Loaded Beef and Potato Bake combines tender Russet potatoes, lean ground beef, a creamy Greek yogurt and sour cream sauce, and melted reduced-fat cheddar cheese. Seasoned with garlic, paprika, and oregano, this comforting casserole makes a hearty family dinner using simple everyday ingredients.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 lb (450 g) lean ground beef (90–93% lean)
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • Salt and black pepper, to taste
  • 4 medium Russet potatoes (about 2½–3 lb total), peeled and thinly sliced (about â…› inch thick)
  • 1 cup plain non-fat Greek yogurt
  • ½ cup light sour cream
  • 1 tablespoon cornstarch
  • ¾ cup reduced-fat sharp cheddar cheese, divided
  • 1 cup low-sodium beef broth
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C). Peel the potatoes and slice them into approximately ⅛-inch-thick rounds. Chop the onion and mince the garlic.
  2. Heat the olive oil in a large skillet over medium heat. Add the chopped onion and cook until softened. Stir in the minced garlic and cook briefly until fragrant.
  3. Add the lean ground beef, breaking it into small crumbles. Cook until browned and no longer pink. Season with paprika, dried oregano, salt, and black pepper. Drain any excess fat or liquid.
  4. In a mixing bowl, combine the Greek yogurt, light sour cream, and cornstarch until smooth. Gradually stir in the low-sodium beef broth until evenly blended.
  5. Arrange a layer of sliced potatoes in a baking dish. Add some of the cooked ground beef and creamy sauce. Repeat the layers until the ingredients are used, distributing them evenly. Divide the cheddar between the layers and topping, reserving some for the top.
  6. Cover the baking dish with foil and bake until the potatoes begin to soften. Remove the foil toward the end of baking to allow the cheese to melt and turn lightly golden. Continue baking until a knife slides easily through the potatoes in the center. If the potatoes remain firm, bake longer, covering the dish again if the top browns too quickly.
  7. Let the casserole rest briefly before serving. Garnish with freshly chopped parsley and serve warm.

Notes

  • Slice the potatoes evenly, about â…› inch thick, to help them cook consistently.
  • Mix the cornstarch thoroughly into the yogurt and sour cream before adding the beef broth to help prevent lumps.
  • Check the center potatoes for tenderness before serving. Baking time may vary depending on the thickness of the layers and the baking dish.
