Description

This hearty stuffed bell pepper soup combines lean ground beef or turkey, colorful bell peppers, tomatoes, savory herbs, and tender brown rice in a comforting tomato broth. An easy one-pot dinner perfect for cozy evenings and meal prep.

Ingredients

Scale
  • 1.5 lbs. lean ground beef or turkey meat
  • 1 Tbsp avocado oil, or olive oil
  • 1 large yellow onion, diced
  • 2 red bell peppers, diced
  • 2 green bell peppers, diced
  • 2–3 cloves fresh garlic, minced or pressed
  • 1 14.5 oz jar organic diced tomatoes with juice
  • 1 15 oz jar organic tomato sauce
  • 4 cups broth, I use chicken or beef…use your fave
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 Tbsp smoked paprika
  • sea salt and freshly ground black pepper, to taste (about 1/4 tsp each)
  • 2 cups COOKED brown rice
  • a small bunch of fresh parsley leaves chopped, to garnish

Instructions

  1. Heat the avocado oil or olive oil in a large soup pot or Dutch oven over medium heat. Add the diced yellow onion and cook, stirring occasionally, until softened.
  2. Add the ground beef or turkey. Break it into small pieces with a spoon and cook until browned and no longer pink. Drain excess fat if needed.
  3. Stir in the diced red and green bell peppers and minced garlic. Cook briefly, stirring frequently, until the garlic is fragrant and the peppers begin to soften.
  4. Add the diced tomatoes with their juice, tomato sauce, broth, dried basil, dried oregano, smoked paprika, sea salt, and black pepper. Stir well to combine.
  5. Bring the soup to a gentle simmer. Reduce the heat as needed and cook until the bell peppers are tender and the flavors have blended.
  6. Stir in the cooked brown rice and allow it to heat through. Taste and adjust the seasoning if needed.
  7. Ladle the soup into bowls and garnish with freshly chopped parsley. Serve hot.

Notes

  • Ground beef provides a richer flavor, while ground turkey is a delicious alternative.
  • Use cooked brown rice as listed. Add it near the end to prevent it from becoming overly soft.
  • The soup thickens as it rests because the rice absorbs broth. Add extra broth when reheating if desired.
