Ingredients

Scale

Mocha Cupcakes

  • 1 cup all purpose flour
  • 1/2 cup cocoa powder, sifted
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup vegetable oil
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2–2.5 tbsp instant coffee granules
  • 1/2 cup buttermilk (or 1 tsp vinegar mixed with 1/2 cup milk)

Coffee Frosting

  • 3/4 cup unsalted butter, softened
  • 3–3.5 cups powdered sugar, sifted
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1–1.5 tbsp instant coffee granules
  • 4–6 tablespoons whipping cream or heavy cream
  • Chocolate-covered coffee beans
  • Chocolate shavings

Instructions

  1. Preheat the oven to the temperature specified by your complete baking instructions and line a standard cupcake pan with paper liners.
  2. In a bowl, whisk together the flour, sifted cocoa powder, baking powder, baking soda, and salt.
  3. In a separate bowl, combine the vegetable oil, brown sugar, granulated sugar, eggs, vanilla extract, and instant coffee granules. Mix until well combined.
  4. Add the dry ingredients to the wet mixture, alternating with the buttermilk. Mix gently until the batter is uniform, avoiding overmixing.
  5. Divide the batter evenly among the prepared cupcake liners, leaving room for the cupcakes to rise.
  6. Bake at the verified oven temperature until the cupcakes are set and a toothpick inserted into the center comes out clean or with a few moist crumbs. The original recipe does not specify a baking temperature or time, so confirm these before baking.
  7. Transfer the cupcakes to a cooling rack and allow them to cool completely.
  8. To make the frosting, beat the softened unsalted butter until creamy. Gradually add the sifted powdered sugar, mixing until incorporated.
  9. Add the vanilla extract, salt, and instant coffee granules. Mix until the coffee is evenly distributed.
  10. Add the whipping cream or heavy cream gradually, using 4–6 tablespoons as needed, and beat until the frosting is smooth and holds its shape.
  11. Pipe or spread the coffee frosting over the completely cooled cupcakes.
  12. Decorate with chocolate-covered coffee beans and chocolate shavings before serving.

Notes

  • Adjust the instant coffee within the specified ranges to suit your preferred coffee intensity.
  • Add the cream gradually when preparing the frosting to achieve a thick, pipeable consistency.
  • Cool the cupcakes completely before decorating. Store frosted cupcakes in an airtight container in the refrigerator.
