Description
These No Bake Healthy Pumpkin Pie Energy Balls are an easy, no-bake snack made with cashew butter, pumpkin puree, vanilla protein powder, and warm pumpkin pie spice. Naturally sweetened with maple syrup, they’re simple to mix, roll, and chill for a convenient fall-inspired treat.
Ingredients
Scale
- 2 tablespoons paleo flour (I use Bob’s Red Mill Paleo Flour, coconut flour or almond flour would also work)
- 1 tablespoon vanilla protein powder
- 1 tablespoon pumpkin pie spice
- 1 cup cashew butter (I use Betsy’s Best, but any nut butter would work)
- 1 tablespoon maple syrup (or honey)
- 2 tablespoons pumpkin puree
Instructions
- In a medium mixing bowl, combine the paleo flour, vanilla protein powder, and pumpkin pie spice. Stir until evenly mixed.
- Add the cashew butter, maple syrup, and pumpkin puree.
- Mix until all ingredients are fully incorporated and a thick, cohesive mixture forms.
- Scoop the mixture into portions and roll between your palms to form balls.
- Place the energy balls in a container and refrigerate until firm.
- Serve chilled and store leftovers in an airtight container in the refrigerator.
Notes
- Coconut flour and almond flour can be used in place of paleo flour, though the texture may vary.
- If the mixture is too sticky to roll, let it rest briefly before shaping.
- Use plain pumpkin puree rather than pumpkin pie filling.
